Sweet corn is a variety of maize with high sugar content. Sweet corn is the result of a naturally occurring recessive mutation in the genes which control the conversion of sugar to starch inside the endosperm of the corn kernel.
Storage Tips for Corn
Wrap whole sweet corn husks in damp paper bags and stash them in the refrigerator for 24-48 hours. Blanch whole ears in a pot of boiling water, then bag and freeze them for up to a year. If you'd prefer your corn canned, cut it off the kernel and pack it into heated jars before using a pressure canner to lock in freshness.
